Since I have become vegetarian there has been one problem plauging my days, leaving me restless, scowering YouTube for recipes... I cant eat Pho.
So maybe I'm over reacting but pho and ramen were some of my favorite foods! Ive look everywhere and still can find a decent substitute, and any that don't seem bad have some pretty hard to find ingredients that aren't in my area.
Do you guys know any asian style soups?
Preferably ones with noodles.
Please help a guy in search of comfort

If you cook plain flour-based (egg free) asian noodles in a very tiny amount of water (like half a cup of water), with a lot of oil (maybe half a cup of oil), and add enough noodles to soak up all of the water and oil (to the point they're soft), you can fry them to a very ramen-like consistency.

Otherwise, rice noodles are usually vegan.

For Pho, prepare the broth first from vegetable broth (use one based on yeast extract, or just use Yeast extract), and some pieces of seitan or TVP. It may take some tweaking to get the flavor right. Use traditional Asian spices, aside from the meat. Onion, ginger, anise, cilantro, basil, soy sauce... a bit of sriracha. You can basically copy the spices from a meat recipe.

If you're using rice noodles, then boil them in the broth. Or for ramen, do as above and add them after they're fried.
