Im really curious why he refuses to address it. Cognitive dissonance? Fear of having to seriously consider the arguments and possibly change?

Sure he has. No matter how disagreeable the first part was, the video was about him after all. Few people would lack the curiosity to watch the whole video if it were dedicated to them. I doubt Dillahunty is one of these few.
Dillahunty is smart enough to realize that he made stupid arguments, but as he makes a living on his reputation of being a rational person he (correctly) worries that a response might bring more attention to the fact that he is not always rational.
