Starting as of right now, I am going to be a full fledged vegan.
Granted, I will probably go back to Lacto-vegetarian for Christmas dinner, and then right now back to Veganism. I will be Vegan for health reasons
Wish me luck, tomorrow i my first day shopping for a full vegan grocery list.

Congratulations, that's great!
Just eating dairy a couple times a year in family gatherings to prevent tension and avoid any hurt feelings (like if somebody made something for you) because of the cost benefit analysis is a lot different from not caring about the ethics, right? And it's still much better than eating it all of the time.
It's a true dilemma when a grandmother makes a vegetarian lasagna for you with cheese, and you have to choose between eating it, and hurting her feelings. I understand why people will eat some dairy in those situations. Veganism is really hard for older relatives to understand sometimes, and they can make mistakes.
That doesn't mean you don't care about the ethics of harm to environment from dairy, or that you're a hypocrite. It's being human.

To be honest, I am a bit of an environmentalist as well as someone who cares about animals, which is why I don't wear or purchase fur, or leather. But I am not being vegan for ethical reasons, even though I am glad that it is ethical in nature. I am not going to deny that there is emotion in my decision as well, however.

I don't necessarily see emotion and ethics as having anything in common, other than sometimes overlapping by accident. Ethics is more "I'm doing this because, rationally, it's the right thing to do", whereas emotion is more "I'm doing this because it makes me feel good/I'll feel bad otherwise because it has a face". I am thinking of making a "What I Ate Today" series for my blog. But I eat a lot of veggies, homemade vegetarian chili, wheat thins, lentil soup, toast with peanut butter and bananas, and stuff like that. I try to eat pretty healthy.brimstoneSalad wrote:Cool! I'd definitely suggest trying out a home made nut cheese for the bread.
Maybe walnuts, almonds, frozen strawberries (berries are better than bananas), and some stevia/splenda to sweeten, and a splash of lemon juice. If you blended that up, it could make a good strawberry cream-cheese like spread for toast.
Blueberries are another good option for flavor, or raspberries, etc. You can usually find a pretty good deal on frozen berries at grocery stores.
