Vegan milk problem

Post by TheShwear »

Hi! I was making milk with broken wheat. I basically just added water, blended and filtered. When I started boiling it a jelly like substance started forming. Does anybody know what it is? How can it be avoided? and what can it be used for? Please help. Thanks.

The jelly is caused by the starch in the wheat. You need to cook the wheat first, then blend and then strain/filter.

It's better to use nuts or legumes, because they contain less starch that will cause this problem. Those are usually cooked, blended, then strained as well, though. It's not typical to cook after.

If it's already congealed, you could use it for pudding or something, by adding sugar and chocolate (or another flavor).
