Is there an optimal human population? How should such a figure be calculated?

I could tell you about how many the Earth could support... that would involve looking at the physics of black body radiation and solar incidence. The question would probably be how many people could live happy lives, but that probably has more to do with having enough basic resources and community.

If we maxed it out, it would be literally impossible to abuse animals though. We wouldn't be able to waste the resources.

We'll have to see a radical shift in human behavior anyway, on account of global warming. Of course, the cost of suffering to get there will be tremendous... if we can slow it down a little maybe we can make it to a more sustainable future without that amount of pain.

I think your theory is overly optimistic. People who have the means are unlikely to give up their meat eating habits just because people are starving in other places. There would be social unrest and upheaval and the rich would barricade their homes and neighborhoods. It will take a lot more than sympathy for starving masses to change the ways of the meat eating wealthy.
