I'll go with potatoes. "Boil them, mash them, stick them in a stew. Lovely big golden chips ..."

5 years ago I never would've imagined acquiring a taste for it, but I like, even crave it now, plus it's really healthy so my vote goes to it easily. Though red onion, garlic, and carrots are all running close behind, tied for second place.

Still I'd say my favorite is Artichokes! I like boiled artichokes, eating the leaves one at a time, and finally getting to that soft flavorful core. It's best with a dipping sauce of vegan mayonnaise; with lemon juice, garlic powder, and whatever spices I feel like. :P

Tuff decision between broccoli/potato/sweet potato, but I'll go with the first one. Actually, I haven't eat it in a while, but it is an old love that comes from my childhood.

My favorite vegetables are carrot and beetroot.Using which we can make even sweet dishes.
